OK, here’s the deal.

My blog started at Blogspot.

Then I moved it WordPress.com (hosted by WordPress). But I yearned for more control.

It has now moved – permanently – to www.KathEats.com, hosted by ME!

So bookmark www.KathEats.com and I’ll see you there!!

Off to Philly

I’m  headed to Philly and back today! I’ll post a whole day’s recap tonight – that is if my plane isn’t delayed until tomorrow or something crazy!

See you all then, and wish me luck making good choices in airports and restaurants!

FYI Part II

OK, I may have screwed my domain name with this host switch. I just found out that if I switch hosts, I’ll have to manually upload all of my photos, which would mean I’m not doing it because that would take years. If the KathEats.com domain does anything weird, I will still be blogging here at http://Katheatsrealfood.wordpress.com. So use that until I get this all figured out! Ugh!!

FYI

If my blog suddenly disappears, it’s because I’m working on switching hosts. You all shouldn’t notice any changes (the domain will remain www.KathEats.com) and it should be the same format (unless I change the theme when I’m done) but I’m just giving you all a heads up if my domain switches before the blog does and you get some crazy page, don’t panic. I’ll be back!

http://katheatsrealfood.wordpress.com should still be up and running!

Cranberry Sauce Recipe

Homemade Healthy Cranberry Sauce

Here’s my recipe for cranberry sauce that I posted in the comments. Thought some of you might want to try it!

Recipe:

I use the recipe on the back of the Ocean Spray bag as a guideline and go from there. It says to put the whole bag of berries in 1 cup of water and 1 cup of sugar. Instead of the sugar, I put about 1/3 a cup of splenda. I like my cranberries tart though, so you might want to add more. I’ve also experimented with a cinnamon stick, vanilla extract, orange juice and cloves. Just add what you like!

So once you have everything in the pot, cook it on medium heat until all the berries start to pop open and spray their gel all around the pot. I usually keep cooking until all the water is absorbed, about 10-15 minutes. Be careful – the pot has a tendency to boil over if you don’t watch it! And the berries will splatter as they pop open – you might want to keep a lid handy to partially cover the pot.

The sauce comes out to about 10 calories per ounce when cooked and cooled.

Stir into oatmeal, smother on oatmeal pancakes, or my favorite – as a topping on plain yogurt!

TA DA!!!!!

The new and improved dining room!

It’s soooo serene now and beautiful and calming. I LOVE the white, green and brown contrasts. I had breakfast in there this morning when the light was shining in and just felt so happy!! It will be perfect for our Thanksgiving feast in 2 weeks – we’re hosting our families for the first time as newlyweds!

My 25th Birthday at 120 lbs

Before

Summer 2004 around 150 pounds

In A Nutshell

I’ve lost over 30 pounds and did it the best way possible: hard work!

I am maintaining a 30+ pound weight loss at around 120 lbs. After putting on about 25 lbs in college due to foot surgery that kept me from running and out-of-control portions of “healthy” food, by graduation I was ready to take control of my life and make health my top priority.

My husband, then fiancé, and I spent a year cooking healthy meals and exercising everyday. He lost 30 pounds in 3 months; it took me a year and a half.

Now, -30ish lbs later, I’m the healthiest - and happiest - I’ve ever been.

Highest Weight: 151, December 2005
Goal: 120, March 2007
