Cute Lunch!

The husband made my lunch today since my class went late last night. I asked him for a half sandwich and spinach salad made with some leftover chicken and he came up with the cutest lunch!

Spinach salad with carrots, apples, almonds, and 1.5 oz diced white meat chicken. Plus a homemade walnut oil-lime-honey dressing.

Cranberry sauce in low-fat plain yogurt with flax (it looks kind of gross!)

Half a pimento cheese sandwich on Ezekiel bread:

Apple slices with cinnamon:

All together for ~550 calories:

After lunch I went on a 30 minute walk. It was sunny and chilly out there, but so refreshing. -111 calories more.

    ok, so here’s a strange question/ a strange meal choice of mine…buut, nonetheless, I figured I’d ask what you thought..knowing that it’s a bit odd to begin with :)

    ANyways, when I’m in a pinch for time and fresh groceries, I sometimes resort to a dinner of the large container of fage 0% yogurt…hah yep, the whole damn thing! It’s 17.6 oz of fat free greek yogurt, and I love it–which leads me to just simply create a whole meal out of it…in a pretty large quantity. I add a sprinkle of some puffed wheat and wheat bran, and then usually have some fruit to go along with. I know this isn’t an ideal meal in terms of getting balance and all of the food groups in, but otherwise, is there any reason that this is “bad”? thanks!

In A Nutshell

I’ve lost over 30 pounds and did it the best way possible: hard work!

I am maintaining a 30+ pound weight loss at around 120 lbs. After putting on about 25 lbs in college due to foot surgery that kept me from running and out-of-control portions of “healthy” food, by graduation I was ready to take control of my life and make health my top priority.

My husband, then fiancé, and I spent a year cooking healthy meals and exercising everyday. He lost 30 pounds in 3 months; it took me a year and a half.

Now, -30ish lbs later, I’m the healthiest - and happiest - I’ve ever been.

Goal: 120, March 2007
