Tapioca

I was bad. I made tapioca even though I’m not hungry at all just because I was excited about the recipe. I made it without sugar, so the ingredients are 1 T tapioca balls, .9 cups milk, and 1/3 of an egg. I topped it with 8 raspberries for some sweetness. It’s pretty healthy since it’s really just like a cup of milk! I wonder if it would work with just egg whites…. Calories ~ 120.

Total calories today: ~1310, which is still insanely low.

    I love tapioca pudding. I haven’t had it in forever but it’s great with sliced peaches.

My 25th Birthday at 120 lbs

In A Nutshell

I’ve lost over 30 pounds and did it the best way possible: hard work!

I am maintaining a 30+ pound weight loss at around 120 lbs. After putting on about 25 lbs in college due to foot surgery that kept me from running and out-of-control portions of “healthy” food, by graduation I was ready to take control of my life and make health my top priority.

My husband, then fiancé, and I spent a year cooking healthy meals and exercising everyday. He lost 30 pounds in 3 months; it took me a year and a half.

Now, -30ish lbs later, I’m the healthiest - and happiest - I’ve ever been.

Highest Weight: 151, December 2005
Goal: 120, March 2007
